| Is this possible to do, or do one of the existing models need to be taken and extensively modified? 
 Is there a tool that allows me to directly edit the tables?
 
 Any recommendations on the best place to start?

| It is possible, provided that you know enough about the real aircraft's physical data and performance.

 use Aircraft Airfile Manager (AAM) to edit tables, I find it the most convenient tool for this purpose.
