Is this possible to do, or do one of the existing models need to be taken and extensively modified?
Is there a tool that allows me to directly edit the tables?
Any recommendations on the best place to start?

It is possible, provided that you know enough about the real aircraft's physical data and performance.
Best place to start is here:

use Aircraft Airfile Manager (AAM) to edit tables, I find it the most convenient tool for this purpose.
